For a snack: Scrammble 1 egg or 2 egg whites, and split between 2 slices of low sodium deli ham. Add 1 sprig of steamed or roasted asparagus and 1/2 tsp of shredded cheese (optional). Roll and pan sear the ham over medium heat. About 3-5 min, rotating often.
For a meal: Scrammble 2 eggs or 4 egg whites and divide between 4 slices of ham.
Serve with a side salad or your favorite veggies and enjoy!
